Olives are gathered between late October and early November from nearby mountain villages and promptly delivered to the local olive press within hours of being harvested.

Olives are transported to machinery, washed, sorted, and cold pressed into liquid gold. Our infused olive oils are individually flavored with locally sourced ingredients.

We follow the tried-and-true method from Greek villages. Maintain the integrity of your oil in our soma-stamped can. No gimmicky bottles, no concerns for your oil degrading over time.

Higher altitude areas provide ideal conditions for cultivating top-notch olive oil: crisp mountain air, sunny groves, and a rainy winter climate. Recent scientific studies at local universities have shown that extra virgin olive oil from higher altitude regions resulted in higher levels of polyphenol and antioxidant content.
